It’s so hot out, and according to the weather its going to be hot for the rest of the week! When its hot out like this who wants to cook? No one wants to heat up their house by using the oven, and do you really want to stand out in the heat to use the barbecue? Maybe later in the evening once it cools down, but not in the highest heat of the day. So for lunch why not try out this quick healthy recipe to make when its too hot to cook. This will keep well in the refrigerator for days!
I will call this recipe Faye’s Bean Salad. I love this salad, and whenever I go visit my brother and sister in law at their cottage, she makes this knowing that I like it so much. I asked her for the recipe once, and she just rhymed it off of the top of her head. I don’t know where she got the original recipe, or if it was just passed down through her family like good recipes are. I have not made it myself yet, this will be the first time, I hope it turns out the way she makes it.
Faye’s Bean Salad: According to Faye
- can of green beans- don’t drain
- can of yellow beans- don’t drain
- can of chick peas or kidney beans
- onion sliced thinly
- dash of salt and pepper
- 1/2 cup oil and 1/2 cup vinegar
- approximately 1 cup sugar ( I may try to reduce sugar to 1/2 cup)
Mix together the day before you plan to serve, and let sit in the refrigerator. Lasts for about a week in the fridge! This can be served with cold items like lettuce salads, corn salads, other bean salads, pasta salads, leftover chicken, or beef, cans of tuna, or salmon, the options are endless.
